Jasmine Tea with Flowers

This Jasmine tea with Flowers is a fine traditional Chinese delicacy. It takes some of the finest green tea leaves & withers them together with the actual Jasmine flowers to produce a totally natural fusion that has a heady floral scent yet the lightness of a beautiful green tea. There is a lot of careful timing & intuitive synchronised processing to fit in with the diurnal rhythm of day & the plants’ organic behaviour . . .Even though the Tea leaves are picked in Spring, they are stored until early summer to coincide with the blooming of the fresh Jasmine flowers. These are harvested early in the day while the small petals are still tightly closed, kept cool until nightfall and in the early evening, as the flowers begin to open, the tea is blended with them and stored overnight. The night-blooming flowers then open & release their fragrance. This is repeated over and over again until a harmonious balance is achieved reflecting this way of working with Nature.
