The Sao Francisco Yellow Bourbon has a low acidity with intense sweetness and incredibly clean finish and notes of milk chocolate, hazelnut and some fruit notes of melon and apricot.

Sao Francisco is a super approachable, easy-going coffee, with the classic Brazilian taste profile of low acidity, soft, rounded body and naturally sweet. We often release highly expressive and fruity coffees, but this is always a very popular flavour profile! We are enjoying flavours like milk chocolate, hazelnut, caramel, nougat and a mildly fruity note like white grape as it cools.  

The Producer

Sao Francisco has been one of our staple coffees ever since we first started buying it back in 2014 and since then it has been a solid favourite for our regulars every year! So much so that when we first purchased it in 2014, we contracted just a few sacks, now we are purchasing 1,200kg per season! Not only does it feature in our filter roast range but we also use it in Archetype Espresso for 6 months of the year. Granja São Francisco is a family-run farm located in the Mantiqueira de Minas mountains in Brazil’s Minas Gerais region, at around 1,300 metres above sea level, which is relatively high for Brazilian coffee. The area benefits from regular rainfall, mild temperatures and fertile loamy soil, and is now recognised as one of Brazil’s leading coffee-growing regions. Originally acquired by Otaviano’s grandfather, a coffee exporter who saw the potential of Carmo de Minas for speciality production, the farm has gradually expanded from former cattle pasture into biodiverse coffee fields with interplanted shade trees. Today it is run by Otaviano, his wife Maria and their son Luis, supported by 12 full-time staff who live on the farm. Since the 1990s they have diversified their production and now grow Acaia, Mundo Novo, Yellow Catucai, Red Bourbon and Yellow Bourbon, the latter two benefiting from the farm’s higher elevation.    
Yellow Bourbon is a renowned coffee variety originating from the Bourbon cultivar, celebrated for its exceptional sweetness and balanced profile. Its cherries ripen to a striking yellow hue, distinguishing it from the classic red Bourbon. Grown primarily at high altitudes in Brazil and other parts of Latin America, Yellow Bourbon thrives in well-drained, fertile soils. The variety produces a medium-bodied cup with bright acidity, often exhibiting flavors of honey, caramel, tropical fruits, and nutty undertones. Its consistent quality and complex flavor make it highly sought after in specialty coffee markets, and careful processing, like pulped natural or washed, further enhances its nuanced profile.

On Granja São Francisco (Fazenda São Francisco), most of the coffee is processed using the “pulped natural” method. First, ripe coffee cherries are harvested and mechanically pulped, removing the outer skin while leaving much of the sticky mucilage intact.

Then the beans, still coated with mucilage and in their parchment, are spread in thin layers, usually on drying patios, to dry slowly under the sun.  After drying, they reach a stable low moisture level (often around 11‑12%) before being rested, hulled and prepared for export.

This method gives a coffee with the sweetness and body of a natural‑processed bean but a cleaner, more balanced profile, often yielding notes of chocolate, nuts, caramel and gentle fruitiness.

Brewing Tips

We think this coffee tastes great brewed with a V60, Chemex or any pour over method. Take a look at our V60 recipe below to get started. Try using a brew ratio of roughly 1:17 for different size brews.
1. Pre-wet paper filter.

2. Add 18g of coffee to V60 cone ground medium to fine.

3. Pour 40g of water at 96C wetting all the grounds.
4. Wait 30 seconds then pour up to 180g.

5. After 1:30 seconds pour again up 300g.

6. Remove the cone, decant and enjoy!
