Since 2011 we’ve been firm believers in the benefits of syphon coffee since we took it on as our brew method of choice in our café The Hall. This is a fun, visually impressive way to brew really great tasting coffee at home. As a process it’s a lot simpler than it looks, however if you’re in a rush, maybe not ideal.
Syphon coffee combines total immersion and percolation brewing. This means it’s really easy to achieve an even extraction whilst tailoring each brew to your desired strength. Heat desired volume of boiling water in the lower bowl (we go for 300ml) with meths burner. Assemble cloth filter and attach to the upper bowl. Place the upper bowl into lower bowl but do not seal. When the chain starts to bubble, seal the top bowl and water will start to rise. At this point you can add your coffee (we go for 18g), give a good stir and let it do its thing. After 2 minutes take the heat away and let the coffee fall back into the lower bowl filtering through the cloth filter.
Filtering with cloth gives a juicy mouthfeel with less of the silt often found with Cafetieres. It’s important to keep on top of cleaning your cloth filter as it can start to taint over time but if you want to try an even cleaner cup try the paper filter kit available on our kit section of the website.
