This 61% Milk Chocolate from Haiti is rich and creamy with sweet notes of banana, toffee and malt. Cacao beans are grown by a network of 2000 smallholder farmers in the North of Haiti as part of PISA (Produits des Îles S.A.) a social enterprise that produces high quality agricultural products from Haitian soil. PISA purchase the wet unfermented beans from the farmers at a premium then the post-harvest process takes place in Acul du Nord following strict protocols to ensure high-quality cocoa, organically certified. Working in small batches with minimal ingredients, Table Chocolate aim to bring out the true flavours in chocolate, exploring varieties and terroir with a focus on sustainability and traceability.
