The flavour profile of Archetype is all about big body, dark chocolate and caramel with a medium to low acidity. As an espresso it’s easy going and reliable, we like to pull shots of it short and strong to maximise that syrupy mouthfeel and bring out notes hazelnut, coco and molasses. In milk it’s super sweet like milk chocolate and butterscotch and although we usually use it in the espresso machine, a filter or french press will also deliver a satisfying and hefty brew.
The Story
Archetype Espresso is currently made up of 100% Brazil São Francisco, a family-run farm located in the Mantiqueira de Minas mountains of Brazil’s Minas Gerais region. This coffee is grown relatively high for Brazilian standards at around 1,300 metres above sea level. The area benefits from regular rainfall, mild temperatures and fertile loamy soil and is now recognised as one of Brazil’s leading coffee-growing regions. The farm was originally acquired by Octaviano’s grandfather who saw the potential of Carmo de Minas for speciality coffee production. The farm has gradually expanded from former cattle pasture into biodiverse coffee fields with interplanted shade trees. Today it is run by Octaviano, his wife Maria and their son Luis, supported by 12 full-time staff who live on the farm. Since the 1990s they have diversified their production and now grow Acaia, Mundo Novo, Yellow Catucai, Red Bourbon and Yellow Bourbon, the latter two benefiting from the farm’s higher elevation.
